Sweet potato pie recipe

Sweet potatoes aren't just for side dishes, they're for dessert, too. Try this delicious sweet potato pie recipe for Thanksgiving instead of or in addition to your traditional pumpkin pie. Don't forget the whipped cream.



Sweet potato pie
Ingredients:
2 ounces butter, softened (1/2 stick)
1 cup cooked and mashed sweet potatoes
1 cup granulated white sugar
1/4 cup plus 1 Tbsp. evaporated milk (NOT sweetened condensed)
1/2 tsp. pure vanilla extract
2 large eggs, beaten
1 tsp. ground cinnamon (or nutmeg)
1 prepared pie shell for 8-inch or 9-inch pie, unbaked
Directions:
Mix butter, potatoes, sugar and evaporated milk until well blended. Add vanilla, eggs, and cinnamon; mix well. Pour into the prepared pie shell. Bake in a 350°F oven for about 1 hour, until set. Yield 1 pie (about 6 to 8 servings).
Rachael's Recipe Notes:
Put the pie on a cookie sheet before you put it in the oven. If anything spills over, the cookie sheet will catch it.
