Meatless Monday recipe: babaganoush

Eating meatless isn't expensive. You don't have to buy fancy ingredients, a lot of thinks you can make at home in small batches and save money.

With Lent quickly approaching (Wednesday is Ash Wednesday), these recipes can be used on Fridays during Lent for those that are abstaining from eating meat on Fridays.

Baba ganoush, babaganoush or baba ganouj, however you spell it, your family will love this as a side dish dip with veggies or as the main meal with tzatziki, toasted pita points, Greek olives and falafel on your meatless night.
