Taco cheeseburgers

Summer isn't quite here yet in Buffalo, but we can feel it trying. Still thinking about burgers, I have been going through my recipes and have found several to share.

One of my favorite recipes is a twist on the cheeseburger: Taco Cheeseburgers. The recipe calls for American cheese, but feel free to substitute sliced cheddar or sliced Colby. For a bit of a bite, try sliced pepper jack cheese.

Taco cheeseburgers
1 pound extra lean 85% to 90% lean ground beef
1 package taco seasoning mix (or make your own taco seasoning mix)
8 slices American cheese
4 kaiser, hamburger or hard rolls, split and toasted
lettuce leaves
1 jar thick salsa (or make your own salsa)
thinly sliced red onion
pickled jalapeno slices (optional)
Mix meat and seasoning mix. Shape into 4 patties. Preheat broiler to 350*F or heat grill pan or indoor grill such as George Foreman. Cook through to desired doneness (best medium).
Top each patty with cheese slices; grill until cheese begins to melt. Fill rolls with sliced onion, lettuce and cheeseburgers; top with salsa and jalapeno peppers. Yield: 4 servings

Want a bit of kick without the jalapenos? Substitute pepper jack cheese for American.
