Cinco de Mayo celebrations in food

Cinco de Mayo is coming! Actually, it's tomorrow! Are you ready to celebrate? Here are some great recipes, some are healthier for you, some not so much, but they are all delicious!

'Make Mine Skinny' Margarita recipe

Mock Guac (made with frozen peas and avocado; you won't know the difference). I've made this without the Greek yogurt and it tastes just as good, so feel free to leave it out.
I've included a recipe for baked tortillas along with this recipe. They're delicious and cheap to make!

Edamame Mock Guac (made with edamame; lower in carbs,  higher in protein; delicious)

Spicy baked tortilla chips

'Refried' bean dip

Fresh salsa

Honey-cilantro shrimp fajitas
