Recipes for picky eaters: Stuffed sweet peppers, fresh salad dressings, healthier more nutritious salads

Happy Sunday! It's been a busy week with cooking, writing, family and outside work. Time to take a few minutes and catch up.

In the oven today is a big baking dish of stuffed sweet bell peppers. Hubby isn't fond of green bell peppers, so there are a couple for him with red and orange bell peppers. Green peppers were on sale last week and again this week.

I'm also whipping up a few fresh salad dressings for the family to use on their healthier, more nutritious salads. We usually eat a salad with dinner every night and they like a variety of choices when it comes to salad dressing, but their favorites are Greek dressing, French dressing and blue cheese dressing. They've learned to use the salad dressing sparingly, and we make up our own mayonnaise, ketchup and mustard to use in our recipes. We've broken the bottled salad dressing addiction!
